Lucknow Nihari (authentic recipe)

Ingredients;

  • 1500 gram mutton
  • 1 cup mustered oil (processed on high flame with 8 to 10 drops of onion water)
  • 2 bay leaf
  • 5 cloves
  • 3 black cardamom
  • 3 onion large
  • salt to taste
  • 1 cup yogurt(medium)
  • 2 tbs ginger paste
  • 2 tbs garlic paste
  • 5 gram chilli powder
  • 15 gram turmeric powder
  • 15 gram corrinder powder
  • green corrinder handful
  • nihari masala (5 gram green cardamom,3 gram mac,20 gram black pepper,5 cloves,2 gram stone flower,3 gram black cumin,2 gram galang,half gram vertiver roots,1 inch cinnamon stick,5 gram dried rose petal) toasted and blended into powder
  • 5 tbs wheat flour
Directions; put processed mustared oil into pan add 2 bay leaf 5 cloves 3 black cardamom then add mutton and stir for 5 minutes add salt to taste,ginger and garlic paste into pan.Mix turmeric chili powder and corrionder powder into yogurt and pour into mutton. Roast for 10 minutes or until all yogurt water dried.Now add one and half liter water and cook until mutton is half tender, add nihari masala and wheat flour with half cup water and pour into mutton. when perfectly tender serve hot with paratha.
