Classic Omelette with brown potato

Ingredients:

For potato fry

  • 5 green chilies
  • 2 potato sliced like finger
  • 5 clove garlic(chopped)
  • 2 inch ginger piece(chopped)
  • 1 tbs cumin seeds
  • oil
  • spice (salt to taste,1/2 teaspoon turmeric.

For omelette

  • 2 eggs
  • 1 tomato chopped
  • 1 onion sliced
  • handful of green coriander

For charred tomato

  • 2 tbs oil
  • half sliced tomato
  • pinch of salt

Directions: Heat the pan add 5 tbs oil/butter, once heated add 1 tbs cumin seeds, add chopped garlic and ginger into oil, after that add potato sliced along with salt, turmeric and green 1/2 teaspoon chilies and cook for 5 minutes (after adding 1/4 cup water if required).On the other pan heat 3 tbs butter, add onion slice and fry for 2 minutes, add green chili, tomato sliced into onions, pinch of salt and cook for other minute.Add salt and coriander into eggs and pour the egg on onion and tomato, cook the omelette for 2 minutes or perfectly on both sides by flipping.Place the omelette into plate,add potato in the side and garnish with tomato fried and some coriander.
