Roasted Lamb

Ingredients:

  • 5-6 tablespoon butter or olive oil
  • 1 tablespoon wine/red vinegar
  • 5 chopped garlic
  • handful fresh oregano chopped
  • some fresh thyme leaves
  • 1 tablespoon lemon juice
  • 1 tbsp mustard paste
  • Salt to taste
  • 2 tablespoon black pepper
  • 1 and half lamb ribs
  • 1/2 bunch mint leaves
  • 1/2 cup sliced spring onions

Directions:To make the roasted lamb marination first to a blender add 3 tablespoon butter/olive oil, vinegar, oregano, thyme, lemon juice and mustered paste and blend all ingredients and season with salt and black pepper.

Clean and wash the lamb, make lamb pieces dry and season with salt and black pepper, pour half the marination to lamb well coated thoroughly and place the marinated lamb into refrigerator for 3 hours, before barbecue put the marinated lamb at least 30 minutes outside the refrigerator.

Preheat the barbecue pan, add 3 tablespoon butter and some olive oil into it and put the marinated lamb for cooking for 15 minutes on each side at medium heat.

IN a plate mix mint leaves, spring onion and season with salt and pepper. Slice of cooked barbecue place with mint leaves and some fresh thyme.
